Foxwhelp is an apple of singular character. Vibrant and colour, Foxwhelp is full of intense acidity, bursts with gorgeous aroma, and delivers a huge, fruit powered flavour. So what happens if you evolve that flavour by maturing the cider in a peated oak cask? Magic. The amazing profile of the apple is joined by an equally amazing influence from wood, smoke and time. Moorcroft is a magical and mystical pear - a variety that produces soft, fruity perries of the utmost quality. It is characterised by its early season, fast ripening habit, the pears turning to mush if you aren't quick enough to spot when they're ready! Work hard though and you earn this reward. Although a drink with zero fermentable sugar, the quality of the fruit produces something characterised by brilliant tropical fruit salad. Sip and savour and discover pineapples, passion fruit, lychee and lemon swirling around your glass.
A tropical fruit bomb, Winnal's Longdon is a pear that originated just a dozen miles away from our farm around 1790, and is named for its first propagator, Mr Winnal! Although we only started working with this pear in 2022, it has rapidly become one of our very favourite varieties. The perry is zingy with big citrus flavours of kiwi and lime, immensly refreshing and one of our favourite new varieties. Crucially, the variety appears to be resistant to fireblight, and so we highly encourage further planting of this heritage pear.
A testament to the value of good friends. After fireblight forced us to fell our own Gin Pear trees in 2021, Little Pomona let us know about a magical orchard that their friends, Dawn and Robin, had recently bought near Much Marcle. This perry is the result of that connection - together we spent a day alongside us handpicking these precious pears; then halved the bounty and each took them home to ferment. This is a classic Gin Pear flavour; gloriously elderflowery with light pear notes, with rather robust astringency owing to the very wet summer of 2023!
A warming, richly flavoured cider for the autumn evenings. Kingston Black and Dabinett combine with barrel influence for a full-bodied, fruit forward drink. Three different vintages of cider are blended together to express the complexity of matured and young ciders together in harmony. Notes of smoked apples, stewed pears present alongside the sherried trifle filling. The type of cider we love to drink alongside the fire at the close of a harvest day, to rejuvenate the soul and feel the comforting embrace of our precious fermented apples.

Using fresh bittersweet cider apples and wild yeasts, their ciders are naturally fermented in cold cellars, creating a medium-sweet expression that captures the essence of artisan craftmanship.

The unique varietal, softly barrel aged over two seasons 2022 and 2023. The single mother tree near Bromyard has many off spring now. This gently sparkling perry is a family effort and the perry is a reflection of this union with soft lime and melon notes. The most elegant 8.4% perry.

A single varietal Porter's Perfection. This variety seems to perform well worldwide both in the orchard and in the bottle. It is the most refined of all bittersweets with the the tannins in check and the acidity clear but yielding. Fermented and matured in second fill Irish whisky barrels, this gives a very succinct sparkling apple drink at 8.2%.

Herefordshire, where Oliver's is based, is a region that knows good cheese, and it's a natural combination, one well known to cider makers & dating back centuries - drinking their ciders with the local cheeses. This collaboration was born to celebrate and champion the British countryside, and pay respect to the quality makers it holds; all that can be created with milk & the apple!
Sam and Tom spent a day together, blending to create a cider that would go well with a good handful of quality cheddars - from the artisan to be widely available. The hope is you will sit down and discover how the experience of drinking these two things together, changes and enhances each of them. Expect some classic Herefordshire cider apple varietal characteristics, accompanied by some barrel smoke, complimenting the savoury profile & smooth texture of your chosen cheddar; ideally a good farmhouse wedge!

Oliver's Vintage Fine Cider is a cider blended from the best barrels from the 2021 harvest. This iteration is first vintage, using the more briny, vanilla oak Irish whiskey barrels. The charring of the oak barrel, the oak itself & the acidity bring a very different character to this cider. However, one thing remains the same, as it warms in the glass, so the flavours develop in the mouth. This is a memorable, engaging, dry, still cider.
This burnished amber cider is gentle on the nose, aromas of brine & oak, vanilla & apple. We recommend you serve it at rom temperature, even open it up in a carafe; it will change to more plum pudding & dry sherry notes. Texture & flavour is intense, drying & complex.

The super tasty cider is made by soaking regent grape skins in fermenting cider for six days. The skins are strained off and the cider allowed to referment and then mature for six months, before being blended with naturally sweet new season keeved cider.
