ESKIMO EYES is a reflection of the sheer beauty, complexity and character that can surprise and enchant us all.
It is an exquisite and sublime perry with zingy citrus twist of freshness running through a bed of rich tropical fruit, all wrapped in the warm embrace of oak infused with the character of west indian rum and french white wine.
Made from a cocktail of perry pear varietals: Gin, Brandy, Hellens Early, Red Longdon, Blakeney Red and Winnalls Longdon from orchards in Ocle Pychard and Preston Wynne in Herefordshire. The soils are fertile and red, almost too good for perry pears and derived from the underlying Old Red Sandstone. The trees have been in the ground for between 30 and 60 years and are well established high stem, standard trees, grafted and budded on pyrus communis rootstocks.
The 2024 growing season was poor. Pollination weather was challenging, coupled with a very wet end of harvest and generally inadequate (not alternating) sun and rain through the growing season in between.
However, as the juice is keeved, the original sugar level is not so important, as some unfermented sugars will be retained to enhance the fruitiness in the finished perry and high alcohols are less important than good fruit character and fullness of flavour.
Spontaneously fermented by the wild yeasts living in our buildings, on our equipment and in and on the pears.
The perry was then matured and finished in french oak white wine barrels from France and American oak rum barrels from Barbados and Jamaica.

The foundation of the Prove It blend are barrels from 2023 that have been in the barrel rooms “lean to” since the juice was pressed back in the late autumn of 2023.
508-1/23 was a Dabinett/Michelin blend with 10% Foxwhelp in first fill Irish whisky barrel
508-5/23 was a the same Dabinett/Michelin blend but in a second fill white wine barrel
56/23, 57/23 and 58/23 are all a blend and in first fill Irish whisky barrels.
Blended together they give a really rich, ripe red apple chewy and full in the mouth, with a soft coat of vanilla and oak and the vibrant lick of the spirit barrel and the zing of Foxwhelp.
Overtime the gravity had dropped to .098 which required a small amount of residual sugar to bring it up to the the top end of dry in terms of sweetness.
This was filtered, bottled, carbonated by our prosecco carbonator and pasteurised.
THAT WAS THE CIDER BUT BELOW IS THE REAL REASON FOR PROVE IT – BRETT ST CLAIR’S APPLE CIDER DOUGHNUTS AND HERE IS THE RECIPE FOR YOUR DELIGHT AND GLUTON.
The recipe is made with Townsend Discovery juice (as that’s what I’ve had to hand, but any aromatic, forceful apple juice should work).
Pre-ferment:
250g strong flour
250g apple juice
5g fresh yeast
Mixed together and then cold proved (in the fridge) overnight
Dough:
All the pre ferment
750g strong flour
400g apple juice
20g fresh yeast
60g panela sugar
20g sea salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground mixed spice
1/4 tsp ground cloves
125g browned butter
Sugar for rolling
The dough is mixed in three stages. First the ferment, flour, apple juice and yeast worked to full development, before adding the salt and sugar and then finally the browned butter and spices. The dough then has a short prove at room temperature before spending the night in the fridge to slow prove.
In the morning the dough is lightly rolled out and cut with a doughnut cutter before another prove (around an hour). Finally they’re fried in rapeseed oil at 190 degrees c (around 4-5 minutes). Drained and rolled in sugar while still warm.
A sparkling cider which pours a golden amber with a rich sweet aroma. The deep apple flavour fills the mouth with bitter sweet notes. Crafted from locally grown Somerset apples, using traditional techniques to produce this fresh sparking cider. Rich's cider is pressed from apples all grown from within a 30 mile radius of our farm in Somerset.
Dabinett is the most important cider apple in Britain, widely planted for over two centuries. It is a vintage bittersweet with all the character that makes traditional english cider special: tannin, complexity and body. This batch is our first made in stainless steel and the result is a very fruit forward Dabinett! Peach and melon alongside the classic bitter orange combine to make a cider that pops across the palate. Delicious!

Yarlington Mill it’s one the all time great Bittersweet apples. This is the first harvest from our young, top-working trees. The fruit they produce is large and beautiful, but perhaps a little immature. This Yarlington is a little quieter than typical. A gentle flavour gives us a cider that is delightful, relaxing and enjoyable, led by hints of spice and characterised by soft tannins.

Chisel Jersey is a flavoursome, intense Somerset Variety. Characterised as a full bittersweet; the flavour fills the mouth with leathery, spicy astringent tannins, giving the sensation of eating rich dark chocolate. Dry and bitter, but with complex fruit character running through the drink. Best harvested late, and then given at least twelve months to mature and soften, when it transforms into a true delight.

Improved Lambrook Pippin is a delicious eating apple that originated in Somerset. It ripens quickly in late October and is best when fresh, so during harvest Albert gets eating with aplomb! This delicate cider shrouds its alcohol with an incredibly juicy, slightly pineappley aroma and flavour, and has a light finish. Eminently quaffable.
