Moorcroft is a magical and mystical pear - a variety that produces soft, fruity perries of the utmost quality. It is characterised by its early season, fast ripening habit, the pears turning to mush if you aren't quick enough to spot when they're ready! Work hard though and you earn this reward. Although a drink with zero fermentable sugar, the quality of the fruit produces something characterised by brilliant tropical fruit salad. Sip and savour and discover pineapples, passion fruit, lychee and lemon swirling around your glass.
Introducing our version of a “Schwarzbier”, or black lager, a beer which certainly speaks with conviction.
With a base of Pils, debittered roast malt, biscuit malt and a touch of caramalt, this beer is as smooth as a ribbon of velvet – dark, gently roasty and ultra-mega-drinkable. Hopped with Magnum, Perle and Mittelfruh, this is an absolute classic of the lager universe! 🗣

A tropical fruit bomb, Winnal's Longdon is a pear that originated just a dozen miles away from our farm around 1790, and is named for its first propagator, Mr Winnal! Although we only started working with this pear in 2022, it has rapidly become one of our very favourite varieties. The perry is zingy with big citrus flavours of kiwi and lime, immensly refreshing and one of our favourite new varieties. Crucially, the variety appears to be resistant to fireblight, and so we highly encourage further planting of this heritage pear.
A testament to the value of good friends. After fireblight forced us to fell our own Gin Pear trees in 2021, Little Pomona let us know about a magical orchard that their friends, Dawn and Robin, had recently bought near Much Marcle. This perry is the result of that connection - together we spent a day alongside us handpicking these precious pears; then halved the bounty and each took them home to ferment. This is a classic Gin Pear flavour; gloriously elderflowery with light pear notes, with rather robust astringency owing to the very wet summer of 2023!
A warming, richly flavoured cider for the autumn evenings. Kingston Black and Dabinett combine with barrel influence for a full-bodied, fruit forward drink. Three different vintages of cider are blended together to express the complexity of matured and young ciders together in harmony. Notes of smoked apples, stewed pears present alongside the sherried trifle filling. The type of cider we love to drink alongside the fire at the close of a harvest day, to rejuvenate the soul and feel the comforting embrace of our precious fermented apples.

Gala is one of the world’s most popular varieties. Farmers love it because of its high yield, disease resistance, and keeping qualities. For cidermaking it is less widely used, but nevertheless produces a very pleasant cider with gentle texture, an appley aroma and a pleasant, fresh apple taste! Still Cider

Dabinett is the most important cider apple in Britain, widely planted for over two centuries. It is a vintage bittersweet with all the character that makes traditional english cider special: tannin, complexity and body. This batch is our first made in stainless steel and the result is a very fruit forward Dabinett! Peach and melon alongside the classic bitter orange combine to make a cider that pops across the palate. Delicious!

Yarlington Mill it’s one the all time great Bittersweet apples. This is the first harvest from our young, top-working trees. The fruit they produce is large and beautiful, but perhaps a little immature. This Yarlington is a little quieter than typical. A gentle flavour gives us a cider that is delightful, relaxing and enjoyable, led by hints of spice and characterised by soft tannins.

Chisel Jersey is a flavoursome, intense Somerset Variety. Characterised as a full bittersweet; the flavour fills the mouth with leathery, spicy astringent tannins, giving the sensation of eating rich dark chocolate. Dry and bitter, but with complex fruit character running through the drink. Best harvested late, and then given at least twelve months to mature and soften, when it transforms into a true delight.

Improved Lambrook Pippin is a delicious eating apple that originated in Somerset. It ripens quickly in late October and is best when fresh, so during harvest Albert gets eating with aplomb! This delicate cider shrouds its alcohol with an incredibly juicy, slightly pineappley aroma and flavour, and has a light finish. Eminently quaffable.

Recorded by Charles Martell as 'one of the very best vintage pears.' This Gloucestershire variety makes a superb perry with light and easy drinking qualities, full of pleasant pear notes that give it a smooth flavour. It is gently acidic, with subtle notes across the palate of delicious apricot marmalade!

Hedgehog Pear, which is more widely known as Barnet, is a Gloucestershire variety notable for its russeted skin, an uncommon characteristic in perry pears. The flavour is unique as result, with a soft texture, gentle juiciness on the palate and delightful nuttiness. Hedgehogs are very closely associated with the town of Ross-on-Wye, so the choice of synonym seems appropriate!

The 2023 blend of perry pears from the finest of trees of some 6o years old, sweat them, sort them, mill them, allow the briefest of macerations and then press, follow with a keeving and many rackings and then let the native yeasts do their thing and you have a slow fermenting juice fit to bottle at SG 1.010 that will continue to ferment in bottle to stop at just the moment you have no fermentable sugars remaining with a nice gentle fizz and an expression of the fruit that does credit to all concerned. A single varietal Porter's Perfection. This variety seems to perform well worldwide both in the orchard and in the bottle. It is the most refined of all bittersweets with the the tannins in check and the acidity clear but yielding. Fermented and matured in second fill Irish whisky barrels, this gives a very succinct sparkling apple drink at 8.2%.

Oliver's Vintage Fine Cider is a cider blended from the best barrels from the 2021 harvest. This iteration is first vintage, using the more briny, vanilla oak Irish whiskey barrels. The charring of the oak barrel, the oak itself & the acidity bring a very different character to this cider. However, one thing remains the same, as it warms in the glass, so the flavours develop in the mouth. This is a memorable, engaging, dry, still cider.
This burnished amber cider is gentle on the nose, aromas of brine & oak, vanilla & apple. We recommend you serve it at rom temperature, even open it up in a carafe; it will change to more plum pudding & dry sherry notes. Texture & flavour is intense, drying & complex.

Bridgewell is the name of our small ‘mother’ orchard of new varieties, planted ten years ago. A number of new apple varieties that we now adore grow there – Northwood, Improved Lambrook Pippin, Gloucestershire Underleaf, Porter’s Perfection – alongside old favourites, such as Chisel Jersey and Bulmers Norman. This cider is a juicy, smooth blend of them all – driven by delicious green apple acidity, the flavour is long, smooth and satisfying. Best enjoyed with green beans, goats cheese, or prosciutto.
A historic variety dating from the end of 1600s, it is a light bittersharp that produces rather small apples, taking a long time to handpick! However it seems we have been rewarded as we have a cider with a delicious strawberry and raspberry flavour, light in body and easy to drink!
